ഫ്രയിങ് പാനിൽ ഒഴിച്ച് വളരെ എളുപ്പത്തിൽ കേക്ക് || STOVE TOP FRYING PAN CAKE NO BAKE SPONGE CAKE
Vanilla Sponge Cake (No Oven-No Beater-No Cooker), Homemade Sponge Cake
1 cup = 250ml
Eggs - 2
Powdered sugar - ¾ cup
Curd - 2 tbsp
Sunflower oil - 5 tbsp + to grease the pan
Plain flour - 1 cup
Baking powder - 1 tsp
Baking soda - ¼ tsp
Salt - 2 pinches
Milk - 5 tbsp
Vanilla essence - ½ tsp
To prepare the delicious cake batter, combine two large eggs and ¾ cup of powdered sugar in a large bowl, using a whisk or an electric beater until the colour changes to light and texture changes to creamy..
To this mixture, add 2 tablespoons of thick curd, which is not very sour and combine it really well using the whisk or an electric beater. After it is well combined, add 5 tablespoons of sunflower oil (or butter if you prefer to) and mix well again until no ingredients remain separated from each other.
To this wet ingredient mixture, sieve in a cup of plain flour/Maida, a teaspoon of baking powder, ¼ teaspoon of baking soda and two pinches of salt and mix it into a thick cake batter.
At this stage, your cake batter will be slightly on the thicker side, so add 5 tablespoons of cow’s milk or coconut milk or just enough to adjust consistency.
You may also go in with half teaspoon of vanilla essence for flavour..With this, your cake batter will be ready to be poured into a standard sized pan, greased with a little oil.
After transferring the batter into the pan, tap the pan gently to get rid of the excess air bubbles..Make sure that the batter fills only up to half of the pan, and not more than that..else, the cake will not cook through.
Now it’s time to place the pan with the batter on another Dosa pan which is hot. Place the cake pan over the Dosa pan and leave it on a very low flame for around one hour with the lid closed, to bake.
The lid might collect a few water droplets from the vapour..so make sure to wipe it occasionally.
If the cake is not wet to touch, it means the cake is completely cooked through..
Now, remove the pan from the Dosa pan and leave it to cool completely before cutting and serving..
