To prepare the yummy vegetable balls, boil four medium sized potatoes and peel them before they completely cool down.
Add these potatoes into a large mixing bowl and mash them using a fork and combine grated carrot, grated capsicum, finely chopped onion, finely chopped green chilli and finely chopped coriander leaves..
The quantity of potato, grated carrot, grated capsicum should be in descending order.
Next, season it with some pepper powder, chilli flakes and salt to taste.
To this mixture, add 6 tbsp of corn flour and a tablespoon of plain flour, and mix and combine it well to form a smooth dough.
You may add more corn flour, if the dough sticks your hands..
With this, the dough is ready, and you can make a little balls out of it which are ready to be fried in oil, preferably in a non stick pan..
If you use a cast iron pan to fry these, they might stick to the bottom..And always make sure that the oil is bubbling and hot at all times, else it will turn soggy..
Fry these until golden on all the sides..
You can make these balls and refrigerate them up to 3 to 4 days until fried
To make the spicy sauce, combine ¾ tablespoon of normal red chilli powder and 2 tablespoon of Kashmiri red chilli powder along with a little water, in a small bowl, into a thin mixture..
Next, heat a Kadai and add oil to it.
As the oil heats up, add a small piece of onion, finely chopped and a clove of garlic, finely chopped.
When the onion and garlic turn brown, add the prepared chilli powder mixture and mix well..
To this, add half tablespoon of powdered or shaved jaggery, followed by 3 tablespoons (or more or less) of soy sauce, depending on your taste and mix well..
Cook on a very low flame until the oil separates from the gravy.
When the oil is separated, add very little water to adjust the consistency, and bring it to a boil..
The sauce is now ready to be served.
